What are microgreens?

​Microgreens are the early seedling growth of vegetables and herbs. They are most often harvested and eaten within the first 3" of beginning growth. They are more nutrient packed at this early stage of growth than as a fully mature plant, making them an excellent, healthy and tasty addition to any meal. 

Microgreens come in a wide range of flavors ranging from neutral to bitter to even spicy depending on the variety of plant. However, all of their flavors are described as bold and concentrated.

Amaranth

(Amaranthus cruentus 'Red Garnet')

Red garnet Amaranth is a heirloom, warm weather annual leaf vegetable that is native to Mexico and South America, but can be commonly found growing in gardens throughout the United States. At maturity, this plant reaches the height of 6-7' and features erect stems, oval-shaped, burgundy red leaves, and large dark red flower spikes. This plant can be grown in containers, attracts bees, birds, and butterflies, tolerates drought, and it's edible!

Anise

(Pimpinella anisum ‘Anise’)

Anise is a clump-forming tender perennial herb that is native to the Mediterranean region but can be commonly found growing in throughout the northern central United States. At maturity, this plant reaches the height of 3-4' and features green stems, feathery, fern-like foliage with numerous umbels of clustered white flowers. This plant attracts bees, butterflies, and parasitic wasps, is used to flavor perfume and toothpaste, makes insect repellent, essential oils, potpourri, and mouth wash, and is also both edible and medicinal!

Arugula is a heirloom, hardy, cool weather annual vegetable that is native to Eurasia, but can be commonly found growing in meadows and fields throughout the central and western United States. At maturity, this plant reaches the height of 10-24” and features erect stems, 4-5” uniform green leaves, and clusters of white or pale yellow flowers. This plant can be grown in a container, is rabbit safe, tolerates light frost, and is both edible and medicinal!

(Asparagus officinalis 'Mary Washington'​)

Mary Washington Asparagus is a heirloom, hardy, cool weather perennial vegetable that is native to California, where it was developed by the University of California-Davis in 1949. At maturity, this plant reaches the height of 4-5' and features stout stems, feathery foliage, greenish-white to yellow bell-shaped flowers, 8" asparagus spears, and even red berries. This plant can be grown in a container, is resistant to rabbits, has nematocidal properties, is both edible and medicinal, can be used as a coffee substitute, and tolerates drought and frost!

Cinnamon Basil is an annual herb that is native to India and Asia but can be commonly found growing in gardens throughout the United States. Calabrese Green Sprouting Broccoli is an Italian heirloom, hardy, cool weather annual vegetable that is native to the Mediterranean region, but brought to America by the D'Arrigo brothers between 1904-11, and first offered to the public in 1923. At maturity, this plant reaches the height of 30-36” and features erect stalks, 6” bluish-green centered floret, multiple side shoots, and yellow flowers.
